Across cities and towns, food enthusiasts are drawn in by a tempting variety of fast food, from desi and South Indian delights to Chinese favourites. Recently, the people of Bahraich have developed a particular fondness for Russian kebabs.

Irfan Baig, a resident of Bahraich in Uttar Pradesh, discovered the recipe from a friend while working together in catering in Mumbai. After learning the recipe, he brought this mouthwatering treat here, serving it for just Rs 10.

How to Make Russian Kebabs?

Russian kebabs are a unique twist on traditional kebabs, setting themselves apart from those typically found in the market. Instead of the usual ingredients, these kebabs are made with a mixture of vermicelli, gram flour, and chicken, along with a variety of spices to enhance the flavour.

The preparation involves mixing all the ingredients until well combined, then shaping the mixture into patties. These patties are fried in a pan, allowing the vermicelli on top to become crispy. This delightful crunch adds an extra layer of texture and flavour, making the kebabs truly irresistible.

Irfan Baig spent several years working as a caterer in Mumbai, where he mastered a variety of dishes, including the Russian kebab, also known as ‘sevi kebab’. Inspired by his experience, he decided to bring this unique dish to his hometown of Bahraich.

Initially, managing the shop alone proved challenging, but now, with his brother’s help, he has turned the business into a thriving venture. Irfan began selling kebabs at the Mohalla Nazirpura Chhabban intersection in Bahraich, where he continues to serve delicious Russian kebabs from a cozy little shop. The locals here love his kebabs that have quickly become a favourite among residents.
